I posted a little while back about broccoli chips but lamented that I had no photos (when those things are finally out of the oven, simply having the willpower to snap some decent photos before gobbling them up is an inhuman feat). Well, somehow I pulled it off, so I present to you broccoli chips. May they help you visualize the glory of this really easy preparation, but most importantly, may the photographic evidence persuade you to make some yourself. Enjoy!

I like how they look kind of like fallen soldiers on a battlefield. Anybody else see that? Anyone?


I love the variety of shapes that you get from slicing down the stalk; you get some perfectly round bits while others are gnarly and scalloped. This inevitably results in a variety of texture, so you get a good balance of chewy sweetness in the middle and the delicate crispiness of nearly candied-brown edges.

I am a massive fan of roasted broccoli, which I prep the exact same way (olive oil, salt & coarse black pepper in a high heat oven). In fact, I’m making some tonight. Mindmeld?
